- 2 c. quick oats
- 2/3 c. shredded coconut
- 1 tbsp. chia seeds
- 1/2 cup raw honey
- 1 c. natural peanut butter, creamy
- 1 tsp. pure vanilla extract
- 1/2 c. mini semi-sweet chocolate chips
*Note – It’s not recommended to give children under the age of 1 honey.
HOW TO MAKE PEANUT BUTTER ENERGY BALLS
First: Pour all the ingredients in a large mixing bowl and stir to combine with a wooden spoon.


Second: Using a 1-inch cookie scoop, roll mixture into balls and place on a small cookie sheet lined with parchment paper.

Third: Refrigerate about an hour until they are firm and transfer them to an airtight container for storage. Store your no bake peanut butter energy balls in the refrigerator and enjoy for up to 7 days.
ALLERGY SUBSTITUTIONS
Dairy – we use Enjoy Life’s dairy free chocolate chips.
Gluten – make sure your oats are certified gluten free.
Peanuts – sunflower seed butter or almond butter (at room temperature) can be substituted for the creamy peanut butter.
OPTIONAL VARIATIONS
-Flaxseed meal and/or hemp seeds are a great addition to this base recipe. They add additional healthy fats and fiber.
-Substitute pure maple syrup for the honey and dark chocolate chips for the semi-sweet.
-Instead of rolling the mixture into balls, press it into a parchment-lined pan to form granola bars.
