Peanut Butter Energy Balls Recipe

Ingredients
  

  • 2 c. quick oats
  • 2/3 c. shredded coconut
  • 1 tbsp. chia seeds
  • 1/2 cup raw honey
  • 1 c. natural peanut butter creamy
  • 1 tsp. pure vanilla extract
  • 1/2 c. mini semi-sweet chocolate chips

*Note - It's not recommended to give children under the age of 1 honey.

Instructions
 

  • Pour all the ingredients in a large mixing bowl and stir to combine with a wooden spoon.
  • Using a 1-inch cookie scoop, roll mixture into balls and place on a small cookie sheet lined with parchment paper.
  • Refrigerate about an hour until they are firm and transfer them to an airtight container for storage. Store your no bake peanut butter energy balls in the refrigerator and enjoy for up to 7 days.
