A wholesome, chewy, maple brown sugar oat bar recipe perfect for busy mornings, snack time, or anytime you want a cozy homemade treat.

3 maple brown sugar oat bars on a plate

If you love baked oatmeal and the cozy maple taste that reminds you of fall, these Maple Brown Sugar Oat Bars will quickly become your new favorite oatmeal recipe. They’re made with simple ingredients and bake into golden brown squares with the perfect chewy texture.

This recipe uses pure maple syrup (or real maple syrup if you prefer the stronger flavor), brown sugar, and coconut oil instead of melted butter – giving you a dairy‑free treat that still tastes indulgent. These bars are a great way to turn wholesome ingredients into something irresistible!

WHY YOU’LL LOVE THESE MAPLE OAT BARS

  • Chewy texture thanks to the oats
  • Dairy‑free (made with a neutral oil such as coconut oil instead of butter)
  • Perfect breakfast or healthy snack
  • Uses simple ingredients you already have
  • Easy to customize with optional add-ins
  • Stores beautifully in an airtight container at room temperature

INGREDIENTS YOU’LL NEED

Everything comes together quickly with simple mixing – no electric mixer needed!

DRY INGREDIENTS

  • 2 cups quick oats (or gluten‑free oats for a gluten‑free option)
  • 1 cup all-purpose flour (or Bob’s Red Mill gluten-free 1 to 1 baking flour blend)
  • ¾ cup brown sugar
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp sea salt
  • ½ tsp baking soda

WET INGREDIENTS

  • ½ cup neutral oil (avocado oil or coconut oil, melted)
  • ½ cup pure maple syrup
  • 1 large egg (or flax egg for vegan)
  • 2 tsp vanilla extract
  • Optional: ½ teaspoon maple extract for stronger maple taste

MAPLE GLAZE (OPTIONAL BUT AMAZING)

  • ¼ cup powdered sugar
  • 1–2 tbsp maple syrup
  • Pinch of salt

OPTIONAL ADD-INS

  • Chocolate chips or dark chocolate chunks
  • Almond butter or peanut butter
  • Chopped pecans

HOW TO MAKE MAPLE BROWN SUGAR OAT BARS

Preheat oven to 350°F. Line a 7×11 inch pan with parchment paper so the bars lift out easily. Can also use 8×8 inch square pan for thicker bars.

Step‑by‑step

  1. Mix the wet ingredients. In a large bowl, whisk together coconut oil, pure maple syrup, egg, and vanilla extract until smooth and glossy.
  2. Combine the dry ingredients. In a medium bowl, stir together oats, flour, brown sugar, cinnamon, nutmeg, sea salt, and baking soda.
  3. Bring it all together. Pour the wet ingredients into dry and mix until a thick, sticky dough forms. If adding chocolate chips or pecans, fold them in now.
  4. Press into the pan Transfer the dough to your prepared baking dish. Press firmly with the back of a spoon or bottom of a glass so the bars bake evenly and are nice and chewy.
  5. Bake. Bake at 350°F for 22–26 minutes, until the top of the bars is golden brown and the center is set.
  6. Cool completely. Let the bars cool at room temperature before drizzling with the optional maple glaze or slicing.
  7. Optional glaze – whisk together powdered sugar, maple syrup, and salt. Drizzle over cooled bars and enjoy!

Gluten‑Free Option

Use gluten‑free oats and oat flour instead of all-purpose flour.

High‑Protein Breakfast Bars

Hello there!

I’m Sarah, wife and homeschooling mama of 2 boys.

When I’m not in the kitchen cooking and baking up a storm, I love being outdoors enjoying the sunshine or going for an evening golf cart stroll with my hubby on our farm.

I have a passion for keeping our home free of chemicals and making from-scratch meals we can all enjoy.

I thank God each day for giving me the opportunity to share my mission of keeping our home as natural and healthy as possible.
