INGREDIENTS
- 6 whole eggs, beaten
- 3/4 c. cottage cheese
- 3 strips bacon, diced into 1/2 inch size pieces
- 1/4 c. yellow onion, chopped
- 1/4 tsp. salt
- dash of black pepper
- shredded cheese for topping (I recommend Smoked Gouda)
- hot sauce for topping, optional
Notes: This recipe makes 4 large servings. Of course it depends upon the ingredients you use, but with the brands I buy, it is approximately 16 grams of protein per serving.
You can double this recipe to fit a 9×13 inch pan.
DIRECTIONS FOR PREPARING THIS EASY HIGH PROTEIN BREAKFAST EGG BAKE
Start out by preheating your oven to 375 degrees Fahrenheit.
Next, on your stovetop, heat up a large skillet over medium heat. Dice up bacon and add to prepared skillet. As bacon cooks, chop up onion. Continue to fry bacon until it is about half-way cooked and then add in the onion. Cook bacon and onion until bacon is crispy and onions are caramelized and tender, stirring frequently.
There is no need for cooking spray! You can just pour the bacon, onion, and bacon grease into an 8×8″ baking dish. Take a spatula and move around the bacon and onion, using the bacon grease to thoroughly coat the bottom and sides of the pan.
Once the baking dish is greased, spread the bacon and onion out across the bottom of the pan.

Crack the eggs into a medium-sized bowl – whisk together. Add in cottage cheese, salt, and pepper. Whisk again.
Pour egg mixture on top of bacon and onion.

Cook time will vary depending on your oven. Bake for 20 – 30 minutes until center of egg bake is set and an inserted knife comes out clean.

Let cool, slightly. Cut into 4 servings. Top with shredded cheese as you’re serving.
STORING LEFTOVERS
I like to meal prep this high protein egg bake ahead of time for easy breakfasts on busy mornings.
Once the egg bake has cooled down to room temperature, you can cover the baking dish with plastic wrap and refrigerate directly in baking dish. Scoop out servings to reheat as needed.
Otherwise, you can portion out the servings and place each one into a separate airtight container for refrigeration.
The easiest way to reheat is in the microwave for about 30 seconds. If time allows though, the healthier option is to reheat in your oven – 350 degrees for approximately 10 minutes until heated through.
RECIPE VARIATIONS
The best part of this protein-packed breakfast recipe is it uses basic ingredients that can easily be swapped to change up the flavor. Some other variations include:
-Swap the bacon for ground sausage (preferably a good quality pork sausage) and add in 1/2 a diced red bell pepper (or a mixture of red and green bell peppers) with the onion.
-Ham, bell pepper, onion, and broccoli make a delicious breakfast casserole.
-If you’re not on a low carb diet, you could put hashbrowns in the bottom of the greased baking dish and add any additional toppings of choice on top.
*Note if your meat does not have much grease after browning it, you will need to coat your baking dish with cooking spray.
