EASY HOMEMADE GLUTEN-FREE MACARONI & CHEESE RECIPE

Ingredients
  

  • water for boiling noodles
  • 12 oz. of your favorite gluten-free pasta see pasta section above
  • 6 tbsp. butter
  • 3/4 c. whole milk substitute skim milk if you'd like to reduce the fat content
  • 8 oz. block of colby cheese grated (can use sharp cheddar cheese if you prefer - or a combination of cheddar & colby)
  • 1 tsp. salt
  • 1/8 tsp. mustard powder
  • pepper to taste

Instructions
 

  • To start the cooking process, in your Dutch oven or stock pot, bring your water to a boil over medium heat. Once the water is boiling, cook your noodles to al dente according to the package instructions. Cook time will vary with brand.
  • As noodles cook, grate cheese and measure out butter, milk, salt, ground mustard, and pepper. Set aside.
  • Once noodles are done, drain them.
  • Put butter and milk in bottom or Dutch oven or stock pot.
  • Next, dump noodles back in, followed by remaining ingredients.
  • Cook on low heat, stirring constantly until the shredded cheese mixture has melted and your cooked macaroni is covered in a yummy, creamy sauce.
  • Cool slightly and enjoy!
