Dairy Free Brownie Goodie Bars

Ingredients
  

Homemade Brownies:

  • 1 1/4 c. sugar
  • 3/4 c. all purpose flour
  • 1/2 c. cocoa powder
  • 1/4 tsp. fine sea salt
  • 1/2 tsp. baking powder
  • 2 eggs
  • 2/3 c. avocado oil or neutral flavor olive oil
  • 1 1/2 tsp. vanilla extract
  • cooking spray

6.3 oz. Marshmallow cream

Top layer:

  • 1 c. creamy peanut butter
  • 1 1/2 c. dairy-free semisweet chocolate chips or rice milk chips
  • 4 c. crisp rice cereal

Instructions
 

  • Heat oven to 350 degrees Fahrenheit. Grease a 9x13 baking dish.
  • Make your brownie batter by measuring out dry ingredients in a large mixing bowl. Whisk together. Add in remaining ingredients and whisk until just combined - do not overmix.
  • Pour batter into prepared pan and spread it out evenly with a spatula.
  • Bake brownies for 20 - 25 minutes until center is set and an inserted toothpick comes out clean. Watch carefully the last few minutes of baking time to keep brownies from drying out.
  • Let brownies cool completely.
  • Once cooled to room temperature, frost brownies with marshmallow cream.
  • Last, prepare the top layer of the brownie goody bars.
  • In another large bowl, measure out crisp rice cereal. Set aside.
  • Melt peanut butter and dairy-free chocolate chips in a 1-quart saucepan over low heat - stirring constantly. Pour over cereal and gently stir until cereal is completely coated with melted mixture.
  • Spread cereal mixture on top of marshmallow layer.
  • Refrigerate bars at least 1 hour before cutting.
  • Store bars in an airtight container at room temperature or in the fridge.
