Crockpot Pepperjack Potato Soup - Easy from Scratch

Ingredients
  

  • 5 large russet potatoes diced
  • 1 small onion chopped
  • 3 c. chicken broth
  • 1 - 2 tsp. salt to taste
  • 1/4 tsp. pepper
  • 2 c. milk
  • 1/3 c. flour
  • 1 c. heavy cream
  • 5 - 6 slices crispy bacon chopped
  • 1 tbsp. bacon grease
  • 8 oz. block pepper jack cheese shredded

Instructions
 

  • Prep work: Peel and dice potatoes. Chop onion.
  • Add both to slow cooker and cover with broth. Add in salt and pepper. Stir everything together.
  • Cover and cook on high for 3 hours or 6 - 8 hours on low heat until potatoes are tender.

During last hour of cook time:

  • This step is optional - If you'd like less chunks of potatoes and a little smoother soup, use your immersion blender or potato masher to bring soup base to desired texture.
  • Measure out milk and add in flour. Whisk them together well.
  • Pour mixture into crockpot. Add in cream, chopped bacon, bacon grease, and grated cheese. Stir well and cook on low heat for the last hour.
  • Cool slightly and ladle this delicious potato soup into individual bowls for your whole family to enjoy!
