Citrus & Herb Crockpot Chicken Thighs

Ingredients
  

For the Chicken

  • 2 - 2.5 lbs. bone-in skin-on chicken thighs (about 6-8 thighs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Citrus Herb Glaze

  • 1/2 cup fresh orange juice from 1 whole orange
  • 1 tablespoon orange zest
  • 2 tablespoons fresh lemon juice from 1/2 a lemon
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon ground thyme
  • 1/4 cup fresh basil added at the end of cook time

Slow Cooker Instructions

  • Place chicken thighs in a single layer, skin side up into crockpot.
  • In a small bowl, mix together all Citrus Glaze ingredients and pour over chicken.
  • Cook chicken to 165 degrees Fahrenheit (74 degrees Celsius) internally when measured at the thickest part.
  • Low: 4-5 hours
  • High: 2-3 hours
  • Finish with the fresh basil - stir it in right before serving for a burst of flavor.
  • Optional: Broil chicken for a couple of minutes to caramelize the top.
