Start by preheating waffle iron.
In a large bowl, combine all the dry ingredients and whisk them together. Set this mixture aside.
In separate small bowl, crack both eggs and beat them until the egg whites and yolks are fully mixed.
Pour all the wet ingredients, including the beaten eggs, into the bowl with the dry ingredients. Whisk the waffle batter until it is smooth and free of any small lumps.
Once waffle iron is heated up and ready to cook, spray iron with cooking spray.
Pour the batter into the preheated waffle iron, adhering to the manufacturer's instructions for recommended quantity on your specific model (mine produces four waffles at a time, using 1/3 cup of batter for each).
Cook waffles until they are golden brown. Serve right away.
