BANANA CHOCOLATE CHIP MUFFINS (GLUTEN & DAIRY FREE)

Ingredients
  

  • 2 overripe bananas
  • 2 eggs
  • 1/3 c olive oil
  • 1/3 c pure maple syrup or honey
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon ground
  • 1 tsp vanilla extract
  • 1 tbsp creamy peanut butter or almond butter optional
  • 2 c certified gluten-free quick oats
  • 1/2 c dairy-free chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line muffin pan with liners. Set aside.
  • Put ingredients in high-speed blender in the order they are listed. (It is important to put the wet ingredients in the blender first with the gluten free oats on top.)
  • Blend until combined well. Scrape sides of blender bowl and continue to blend, if necessary, until ingredients are a muffin batter.
  • Pour muffin batter evenly into prepared muffin cups.
  • Sprinkle in chocolate chips. Add additional chocolate chips if desired. :)
  • Bake muffins for 15 - 18 minutes until centers are set and muffins are golden brown. For best results, watch closely the last 5 minutes to avoid over-browning them.
