An easy recipe for dairy-free brownie goodie bars that are the perfect balance of fudgy, chewy, and indulgent, making them a go-to option for satisfying your cravings.

WHAT LAYERS MAKE UP THESE DAIRY-FREE BROWNIE GOODIE BARS

The base consists of a delicious homemade brownie layer that take only about 5 minutes to mix together.

Next, is a decadent layer of marshmallow cream. I’m telling you….this cream is so dreamy. If you don’t take a spoonful directly out of the container, you are missing out!

The top layer is a blend of creamy peanut butter, melted dairy-free chocolate chips, and crisp rice cereal.

INGREDIENTS

Homemade Brownies:

  • 1 1/4 c. sugar
  • 3/4 c. all purpose flour
  • 1/2 c. cocoa powder
  • 1/4 tsp. fine sea salt
  • 1/2 tsp. baking powder
  • 2 eggs
  • 2/3 c. avocado oil (or neutral flavor olive oil)
  • 1 1/2 tsp. vanilla extract

6.3 oz Marshmallow cream

Top layer:

  • 1 c. creamy peanut butter
  • 1 1/2 c. dairy-free semisweet chocolate chips (or rice milk chips)
  • 4 c. crisp rice cereal

INSTRUCTIONS

Heat oven to 350 degrees Fahrenheit. Grease a 9×13 baking dish.

Make your brownie batter by measuring out dry ingredients in a large mixing bowl. Whisk together. Add in remaining ingredients and whisk until just combined – do not overmix.

Pour batter into prepared pan and spread it out evenly with a spatula.

Bake brownies for 20 – 25 minutes until center is set and an inserted toothpick comes out clean. Watch carefully the last few minutes of baking time to keep brownies from drying out.

Let brownies cool completely.

Once cooled to room temperature, frost brownies with marshmallow cream.

Last, prepare the top layer of the brownie goody bars.

In another large bowl, measure out crisp rice cereal. Set aside.

Melt peanut butter and dairy-free chocolate chips in a 1-quart saucepan over low heat – stirring constantly. Pour over cereal and gently stir until cereal is completely coated with the melted mixture.

Spread cereal mixture on top of marshmallow layer.

Refrigerate bars at least 1 hour before cutting.

Store bars in an airtight container at room temperature or in the fridge.
