CROCKPOT PEPPERJACK POTATO SOUP – EASY FROM SCRATCH

Do you find yourself constantly searching for new and delicious recipes to add to your weeknight dinner rotation – Look no further than this easy, from scratch crockpot pepperjack potato soup!

This is hands down my new favorite soup! My aunt and I had stopped for a quick lunch a couple months ago at a small restaurant that had pepperjack potato soup as their special that day. I had never heard of it before but after trying it I was immediately obsessed with trying to recreate it at home!

This article will introduce you to that mouthwatering dish. Imagine tender chunks of potato, a little spice from the pepperjack cheese, all with the convenience of using a slow cooker to create the perfect comfort food.

Get ready to learn how to whip up this easy, yet delectable dish in no time.

A NOTE ON INGREDIENT SWAPS

Potatoes – the recipe calls for 5 large russet potatoes diced, but you could substitute with diced hash browns. Look for a brand that only has potatoes in the ingredients list though – no added preservatives!

Diced onion – for a picky eater, use 1/4 tsp. onion powder instead.

Heavy cream – you can use just whole milk; however, the heavy cream adds an extra creaminess to the soup base you cannot beat.

EQUIPMENT NEEDED

  • 3 qt. crock pot
  • frypan to cook bacon (or baking sheet lined with parchment paper if you like to bake it like me)
  • measuring cups & spoons
  • whisk
  • ladle
  • cheese grater
  • immersion blender or potato masher (optional)

SIMPLE INGREDIENTS FOR CROCKPOT PEPPERJACK POTATO SOUP

  • 5 large russet potatoes, diced
  • 1 small onion, chopped
  • 3 c. chicken broth
  • 1 – 2 tsp. salt (to taste)
  • 1/4 tsp. pepper
  • 2 c. milk
  • 1/3 c. flour
  • 1 c. heavy cream
  • 5 – 6 slices crispy bacon, chopped
  • 1 tbsp. bacon grease
  • 8 oz. block pepper jack cheese, shredded

HOW TO MAKE SLOW COOKER POTATO SOUP

Prep work: Peel and dice potatoes. Chop onion.

Add both to slow cooker and cover with broth. Add in salt and pepper. Stir everything together.

Cover and cook on high for 3 hours or 6 – 8 hours on low heat until potatoes are tender.

During last hour of cook time:

This step is optional – If you’d like less chunks of potatoes and a little smoother soup, use your immersion blender or potato masher to bring soup base to desired texture.

Measure out milk and add in flour. Whisk them together well.

Pour mixture into crockpot. Add in cream, chopped bacon, bacon grease, and grated cheese. Stir well and cook on low heat for the last hour.

Cool slightly and ladle this delicious potato soup into individual bowls for your whole family to enjoy!

OPTIONAL TOPPINGS

  • chopped green onions
  • additional bacon chopped into small pieces
  • hot sauce or red pepper flakes to add a spicy kick
  • crackers

HOW TO STORE LEFTOVER CROCKPOT PEPPERJACK POTATO SOUP

Cool leftover potato soup to room temperature. Store in an airtight container (I prefer a quart mason jar with this style lid) in the refrigerator. Best if enjoyed within 3 days.
